Crockpot Spaghetti Squash & Meatballs

Ingredients:

Directions:
  1. Cut spaghetti squash in half around the middle.  Use a spoon to scoop out the seeds and membranes.  Place cut sides down in a large crock pot.
  2. Pour the spaghetti sauce around the sides of the squash and then add the meatballs around the sides as well.
  3. Cook on low for 5-6 hours, or high for 3-4 hours.  Test for doneness by piercing a fork, if it goes through the skin easily, it is done.
  4. Use tongs to carefully remove the squash from the crockpot.  Use a fork to pull out all the squash, discard the shell.
  5. Serve with the sauce and meatballs from the crockpot.

Sagi's Signature Meatballs


Makes 6 servings, 5 meatballs each

Ingredients:

  • Non-stick cooking spray
  • 1 1/2 pounds lean ground turkey
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 1 large egg, lightly beaten
  • 3/4 cup quick-cooking rolled oats
  • 2 cloves garlic, finely chopped
  • 2 Tablespoons chopped fresh cilantro
  • 2 Tablespoons all-natural tomato sauce
Directions:
  1. Preheat oven to 400 degrees, lightly spray large baking sheet with Non-stick cooking spray and set aside.
  2. Combine all ingredients in large bowl; mix well with clean hands
  3. Roll mixture into 30 1-inch meatballs; place on prepared baking sheet.
  4. Bake for 15 to 20 minutes, or until no longer pink in center.
SAGI'S TIP: Meatballs freeze very well. Place 5 cooked meatballs in a ziplock bag and freeze for future meals. You can defrost them in the refrigerator and heat them in a toaster oven or microwave.

SAGI'S VARIATIONS: Experiment with the following ingredient pairings for delicious meatball variations: 1 tablespoon chopped fresh basil and 1 teaspoon fresh lemon zest; 1 tablespoon Worcestershire sauce and 2 tablespoons fresh parsley; 1 teaspoon cumin and 1 teaspoon chili powder; 2 teaspoons hot sauce and 1/2 teaspoon curry powder; 1 chopped fresh chipotle chile and 2 tablespoons chopped fresh cilantro; 2 teaspoons chopped fresh jalapeno pepper and 1/4 cup finely chopped jicama.

Cholesterol: 109 mg / Sodium: 460 mg

Slow Cooker Banana Walnut Oatmeal

Ingredients:


  • 1 cup steel cut oats
  • 1 ripe banana, mashed
  • 1/4 cup chopped walnuts
  • 2 cups almond milk
  • 2 cups water
  • 2 Tablespoons flaxseed meal
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • Optional:
    • Garnish with banana slices, walnuts, or brown sugar
Directions:
  1. Place all ingredients in slow cooker and stir until well combined.
  2. Cook on Low for 8 hours overnight.
  3. In the morning, stir oatmeal with a fork to loosen the steal cut oats and make sure all ingredients are fully incorporated.
  4. Serve warm, with optional garnishes on top!

My 3 Day Refresh Results!

When you think of a cleanse, the first thing that comes to mind is "no food" ... well that is absolutely NOT TRUE!!  I was not hungry AT ALL during the refresh!  You have your different detox drink at each meal, but you get REAL FOOD with it, fruits, veggies, and healthy fat, along with tea!  You don't eat protein for the 3 days, besides the protein that is in the shakes.  I was still able to complete two amazing PiYo workouts and still feel great!
You are given recipes, so this is fool proof!  I didn't feel starved at all!

So here are my results: 

I absolutely LOVED it and I feel GREAT today!  I finally feel back in the game and on track again!  I lost 2 inches around my stomach, where I was feeling the most bloat!  I am already at my target weight, so my body won't really lose anymore, unless I stopped eating and working out.  I didn't use the Refresh to drop weight, I just needed a detox and a little kick start to get back on track after I enjoyed food and drinks for my birthday!

I just paid off two credit cards!!

I could not be more grateful for the opportunity I've been given through Beachbody. It's not just about working out and eating healthy. Yes, it's gotten me in the BEST shape of my LIFE, and I've learned so much about nutrition and clean eating, but this is a complete LIFE CHANGE!

From the people I've met, the personal development I've been exposed to, the free vacation's I've been blessed with, and now... PAYING OFF 2 OF OUR CREDIT CARDS!!! We are almost DEBT FREE!

I am so thankful that I took the plunge a year ago and made the decision to change something in my life by joining a Challenge Group. I never would have imagined it would have led me to where I'm at today. Definitely counting my blessings today

Easy Lemon Rosemary Crockpot Chicken


Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup low sodium, fat free chicken broth
  • 1 lemon, thinly sliced
  • 4 sprigs of Rosemary
  • 2 cloves of garlic, chopped
  • dash of sea salt and a few twists of ground black pepper
Directions:
  1. Place chicken breasts at the bottom of your crockpot. Top with chicken broth, rosemary, garlic, salt, pepper and sliced lemon.
  2. Cook on high for 4-5 hours.
